Ingredients

  1. Dried Jawla (Dried Shrimps): 1 cup, soaked in warm water for at least 10 minutes
  2. Garam Masala: 2-3 tsp
  3. Onions (Pyaz): 1 cup, finely chopped (preferably spring onions)
  4. Garlic (Lehsun): 3-4 cloves, finely chopped
  5. Ginger (Adrak): 1-inch piece, finely chopped
  6. Green Chilies (Hari Mirch): 2-3, chopped (depending on desired spice level)
  7. Kokum: 2-3 pieces, soaked in water
  8. Oil (Tel): 2-3 tbsp
  9. Salt (Namak): To taste
  10. Optional: Brinjal (Baingan): 1 medium, cubed

Step-by-Step Instructions

Step 1: Prepare the Jawla

Clean the dried shrimps by removing any fine shells or debris. Soak them in warm water for at least 10 minutes to soften them. Drain and set aside.

Step 2: Sauté Onions and Spices

Heat oil in a kadhai over medium heat. Add the chopped onions and sauté until they are translucent. Add the chopped garlic and ginger and continue to sauté for another minute.

Step 3: Add Chilies and Garam Masala

Add the chopped green chilies and garam masala to the kadhai. Stir well to combine and let the spices release their aroma.

Step 4: Add Jawla and Kokum

Add the soaked and drained dried shrimps to the kadhai. Stir well to combine with the spices. Add the soaked kokum pieces (after squeezing out the water) to the curry.

Step 5: Add Brinjal (This is Optional)

If using brinjal, add it to the kadhai with the dried shrimps. Cook until the brinjal is tender.

Step 6: Season and Serve

Season with salt to taste. Let the curry simmer for a few minutes to allow the flavors to meld together. Serve hot with steamed rice, chapati, bhakri, or a side of sabzi (vegetable foogat) for a complete Indian meal.
